It’s starting to feel like home here in Maryland!

Last weekend we hung photos and I arranged my plants in nice little nooks around the living room. 

I tried out a local yoga studio and a new trendy coffee shop and roastery. 

We explored several grocery options and perused the aisles thinking, hey, this could be my new spot. 

Naturally, we’ve scouted out all of the nearby takeout options. 

But don’t let the takeout bags fool you, plenty of food has been made, here, too, friends! 

I even had my first *real* dinner party last weekend, hosting two of my friends for a plant-based pizza party in. 

And on Sundays, I meal prep for the week ahead in a kitchen that still feels oddly unfamiliar and new. 

My new favorite snack to have and to hold are these Blueberry Muffin Energy Balls!

This past week M and I mapped out our new daily walk around the neighborhood. 

We used the blinking blue dot on Google maps to pinpoint our location and make connections between intersecting streets and trails. 

28 minutes– the number we ended up with as we stood outside of our new place with the old doormat, reading “There’s No Place Like Home” in the bristles. 

M has never seen The Wizard of Oz, so I’ve added it to the top of our To-Do list.

“I feel like it’ll be better to watch in the Fall,” I explained, dreaming of crunchy leaves and cooler winds and muted colors. 

But for now, it’s still hot, and I’m living on bowls at the new place. 

Today’s recipe isn’t complex, but it’s tasty, packed with plant-based protein, an oil-free dressing, and plenty of kraut.

The moving count down is ON, friends. 

In just five sleeps I’ll be slumbering in a new state! 

Right now life feels really busy. 

When I’m not working on stuff for F&V, I’m working on the loaded logistics of moving. 

Scheduling U-haul rentals, final cleaning, and key exchanges in their appropriate order.

Bribing friends and family to pretty please come help me move in exchange for pizza and vegan treats.

Hiiiiiii, I know I’ve been quiet lately, friends.

Hi, friends, how’s your summer going?

It’s been a *whirlwind* here.

Packing, moving, and shuttling brown boxes labeled with black Sharpie back and forth across the Maryland/Virginia border.

July is my last month in Virginia, and I’m getting excited to start over in a new state. 

Every time I create a new row of boxes in the new condo’s living room, I lock it and leave it feeling like the space is a little more mine; a little more ours. 

Anyway, with all of the hustle and bustle of moving, I haven’t been creating a lot of delicacies over here. 

There’s a collection of Sweetgreen, Cava, and Chipotle takeout bags in my recycling. 

Maybe you’re doing a lot of takeout, too, this summer, or maybe you’re in the mood for a chilled bowl. 

This poke bowl was on repeat before I signed my lease and I can’t wait to recreate it in my new kitchen.

When I stop and think about how far into 2021 we already are, it gives me whiplash.

Is the year going quickly for you, too?

Anyway, April 2 was my birthday, my second birthday in careful quarantine. 

My sister dropped of hand-wrapped gifts to my doorstep and my amazing cousin delivered an exquisite bouquet of flowers. 

I video-chatted and texted with my friends, believing that this time next year I’ll be squeezing them instead of the volume button on my phone. 

And let’s not forget food! 

M made me pancakes– the first pancakes he’s ever made– and they were delicious.

For dinner, we ordered Sweetgreen, because it’s the most “Lauren” thing I could think of that was within the delivery range for Uber Eats. 

The week of my birthday I tested a cake (coming soon!!!) and made a delicious Carrot Cake Baked Oatmeal.

It’s easily mixed up and baked in advance for easy springs breakfast during the week.

This is a recipe where you can have your cake and prep it for breakfast, too, boo.

Did you pull any epic pranks on April Fools Day?

After one of my aloe plants fell out of it’s pot for the fourth (or fifth?)  time last week (it was poorly potted and in a precarious position), I had a plant funeral and buried the evidence in my trashcan.

RIP, aloe. 

As part of an April Fools day joke, I purchased a new plant and propped it up on the late aloe’s plant stand on April the first, waiting for M to notice.

I smirked while he ate his breakfast, finally asking, pointedly, “So, do you notice anything different???”

After doing a lingering living room scan, he finally picked out the monstera deliciosa sitting pretty near the window sill.

I laughed, assuring him I would keep my plant murderess tendencies contained. 

I’m so infatuated with this little green plant and it’s smooth heart-shaped leaves already turning towards the sunshine. 

Let’s see how long it survives…

Hopefully longer than this Raw Walnut Cashew Butter that I made last week and served with banana chips. 

It requires just two ingredients and a blender without any added sugars or oils.

It’s true: I wouldn’t kid about something as serious as nut butter, not even on April Fools!

Triple Berry Granola

Granola doesn’t last long in my house. 

It’s one of the staples that both M and I eat daily, piling it high on big breakfast bowls or grabbing a handfuls before an evening workout. 

If you’re a bit of a granola connoisseur like I am, you know the good stuff it can be expensive.

So, for the past few weeks I’ve been making us homemade granola on a regular basis. 

This is either the beginning of a granola series or the beginnings of a granola product line…ha!

Anyway, it’s been really fun testing new variations each Sunday. 

I bake the mixture in the oven and then break it into cherished chunks before transferring it to an airtight bag for the week. 

When I asked M what granola flavor he wanted this week, he requested “something fruity or tart.”

So I made this Triple Berry Granola and infused it with three kinds of berries for a perfectly sweet and chunky granola. 

It’s totally gluten-free, oil-free, and naturally-sweetened with maple syrup and berries!

January is stereotypically the time of year of start plans. 

New workouts, new diets, resolutely resolving to break bad habits and add healthy routines. 

By now, you might have heard me talking about the cookbook that I’m working on.

The theme is Vegan Meal Prep and includes mix and match recipes for how to be plant-based even when life is crazy (which it always is– right?).

It’s funny, because I feel like I’m carefully crafting a product that I would  love to consume.

Meaning, that yes, I too, would covet a collection of vegan & gluten-free recipes that take the guesswork out of meal time. 

So I’ve been working my way through the F&V archives, drawing inspiration from my favorite easy-to-prep plant-based recipes. 

While making my meal prep list, I thought, why not share this resource with you guys, too? 

If you’ve been here a while you know that all of the recipes on Flora & Vino are pretty darn simple with minimal ingredients. 

Therefore, it could easily be argued that *all* F&V recipes are meal-prep-able.

However, there are definitely some that fit more conveniently into the meal prep lifestyle more than others!

It’s kind of a strange time of year.

The novelty of the new year has worn off and the next big holiday in sight is Valentine’s Day.

I’ve been hunkering down and working on the cookbook with the fire of a fast approaching manuscript deadline.

Honestly, the hardest part of cookbook recipe creation is keeping said recipes from you! 

I’m so accustomed to the instant gratification of the blog posting process that hoarding all of this content feels downright miserly.

Which is why I’m letting one of the recipes slip through the cracks today…

M and I have plans to visit True Food Kitchen this M and I have plans to visit True Food Kitchen this week for V-Day and it reminded me of this Harissa Toasted Cauliflower I made inspired by their menu item. Whether you love TFK as much as I do, you’re going to be obsessed with my version of this cauliflower! It’s baked and then coated in a tahini sauce and topped with fresh herbs, cranberries, and hazelnuts. Enjoy it as an appetizer or side! Cozy and delicious all year round.
