It’s almost September, which means it’s almost time for school buses to be back in service again. 

I shared my “Back to School” nostalgia with M recently, reliving that anticipation of returning to something, new, exciting, and unknown. 

Mom always took my sister and me “Back to School” shopping for new clothes and school supplies. 

My absolute favorite was picking out pens, paper, and folders, organizing and re-organizing the colors and sizes in my backpack. 

Even in adulthood, that feeling of “starting fresh” always hits me when long summer days turn into cool fall mornings and evenings. 

I wish I could bottle that sense of newness, momentum, and expectancy in an elixir for bad days.

10 of my favorite plant-based overnight oats recipes to meal prep for an easy, fun, nutritious breakfast. Perfect for any season of weather and life!

Friends, how is it already August? 

This have been busy here but with all good things. 

This past weekend I went camping with M and friends in the Shenandoah. 

I didn’t have any cell phone service, so my cell phone and watch told me the time but not a lot else. 

Without my electronics, I spent time starting a fantasy series that I previously couldn’t immerse myself in from the reality of my my condo. 

We also hiked 7-miles around the campsite trails, played Exploding Kittens around the campfire, and had the best small and big talk surrounded by a canopy of trees. 

In the mornings, we drank coffee and ate breakfast on the picnic bench with our books and breakfast in hand. 

My forever favorite camping breakfast (and meal prep breakfast at home, too!) is overnight oats. 

They’re so easy to mix up and creating new variations has become a bit of a hobby for me.

Unpopular opinion: Vanilla ice cream is always the best. 

Hear me out; that’s because a good vanilla ice cream is the best base for *anything*. 

You can add anything to a vanilla ice cream and it will be an amazing new creation. 

During my last week in Germany, I hit the vegan ice cream jackpot. 

We did our grocery shopping at a shop that had soy, coconut, and almond-based vegan ice creams. 

Naturally, I had to get one pint of each…for international product research, obviously. 

On our last night, we sat around the kitchen table with M’s little brother, dipping into the ice cream cartons with a spoon, tasting chocolate and vanilla and then chocolate again. 

M is always a chocolate ice cream lover, but I’m consistent with my vanilla love.

Surprisingly enough, I don’t have a classic vanilla recipe for you on the blog. 

I do, however, have a collection of vegan ice cream, sorbet, and popsicle recipes to share with you today!

All of these ice cream recipes are made without an ice cream maker or any fancy equipment.

In Germany it’s really common to not have air conditioning at home.

So for the majority of my stay in Europe I went without the whir of the AC unit. 

I was nervous at first, imagining sweat-soaked clothes and fanning myself incessantly with anything accessible.

But it wasn’t like that at all. 

Honestly, I didn’t really miss it. 

There was a beautiful breeze during the day with the windows open, and I got used to running around the house in shorts and a tank top. 

In the evenings and early mornings I even had to throw on some layers because the temperature cooled down without the sun. 

Except this ONE night that the kitchen got *really* hot. 

Mostly because on this particular evening I decided to turn on the oven and do a lot of meal prep. 

Sitting around the kitchen table in a sticky hot haze, I thought to myself, lesson learned. 

So, maybe don’t do that.

I’m back from my second European adventure!

If you’ve been around here a while, you know that I made my first trip to Germany last December to meet M’s family in friends.

It was really special to be back again for warmer weather and see the countryside green and alive. 

When I arrived it was strawberry, cherry, and Spargel (asparagus) season! 

I also saw my first Schwimmbad (swimming pool) and Biergarten (beer garden) in M’s home town. 

We went on a camper van adventure to Austria and Switzerland, hiked the Zugspitze (tallest mountain in Germany), and attended the beautiful wedding of a friend. 

But probably my most favorite parts were hanging out at M’s house.

Plucking cherries straight from the tree, yoga on the patio, chess lessons from M’s little brother, reading with M sprawled across the couch. 

It was a busy but beautiful trip and my only regret is that I didn’t improve on my German more before going! 

I returned to the U.S. this past weekend tanned, tired, and craving all of the greens.

What adventures have you been on lately?

Recently I went a winery adventure with a girlfriend to a vineyard in Virginia. 

…on a Thursday. 

It was a bit of a wild adventure for a weekday evening, driving into Southern Virginia for girl’s night. 

But it was totally worth it to get out and see, taste, and experience something different. 

We sipped on Petit Verdot on the winery terrace, marveling at the unique decor of the tasting room. 

In a moment of recognition, I turned to her and noted that our spontaneous trip was the furthest I’ve been from home since 2019. 

But you don’t have to drive for hours to do something new, boo.

It’s getting hot here, friends. 

This week is in the 90’s which makes me grateful that my community pool is *finally* open.

I dawned the orange and yellow striped bikini that I purchased for 2020 and then never wore to the pool for the first time this week. 

My sister and I lay on beach towels draped over pool chairs, in awe of the strange normalcy of it all. 

Going to the pool for the first time since 2019. 

I felt naked to be have so much skin exposed, my belly button ring catching rays from the golden sun. 

What normal things have YOU been doing this summer? 

I’m hoping to see some fireworks for the Fourth of July. 

If you need me I’ll be at a local vineyard nestled on top of a mountain, sipping wine and watching the skyline light up with exploding colors.

This past weekend I went camping for the first time in a tent. 

The first night I hardly slept, tossing and turning on our air mattress, amazed that nature could be so deafeningly loud. 

The second night, I slept much better, maybe because I grew more comfortable in my surroundings or maybe just because I was too darn tired. 

Anyway, I wasn’t sure what to expect from the whole experience.

I never grew up camping, so I just kind of assumed camping wasn’t for me. 

But, man, was I wrong; I loved it. 

Sitting around the campfire telling stories, eating chili reheated over a camp cooktop, watching the flames lick the wooden logs. 

I felt totally unplugged and yet left recharged, surrounded by friends who feel like family against a comforting backdrop of nature and community.

And since this was my first real camping trip, it was also my first ever real s’mores. 

My friend Anna showed me how to brown the marshmallow on all sides before smushing it on a square of dark chocolate between graham crackers. 

We captured my post-s’mores smile in a photo to commemorate the moment; my eyes closed in marshmallow rapture.  

With all of the excitement of my trip last weekend, I almost forgot that next weekend is Memorial Day.

Mother’s Day Recipe Round Up

Hi, friends!

Today my Saturday project was potting a set of four red begonias that my community was gifting to all residents. 

I decided to put them on the front steps in two pots, two plants per pot, one pot on either side of the cement steps. 

To be honest, these are the first flowers that I’ve ever potted myself.

So I felt pretty adult dawning gardening gloves and packing potting soil around flimsy scarlet petals.

And flowers made me think of mom, because on Mother’s Day usually flowers are my thing.

(I may or may not have called my parents for potting advice, because parental input > Google.)

Even before the pandemic, I liked to send my my mom a bright bouquet of flowers to say, hey, I’m thinking of you. 

This year, I thought I’d be creative and group together a list of themed recipes that would be delicious to enjoy with mom or in her honor!

Whether you love TFK as much as I do, you’re going to be obsessed with my version of this cauliflower! It’s baked and then coated in a tahini sauce and topped with fresh herbs, cranberries, and hazelnuts. Enjoy it as an appetizer or side! Cozy and delicious all year round.
