Hey, it’s me again, and it’s still Earth Day. 

You might have just seen my post earlier today on my 16 Sustainable Swaps, where I share my favorite products and methods to help ease my carbon footprint. 

Silicone bags and reusable paper towels aside, we can also make a huge difference by simply bringing less product packaging into our homes!

Much of this comes in the form of pre-packaged foods and convenience items that we can easily recreate at home. 

In this Earth Day Recipes post, I’m sharing a resource of my favorite homemade recipes to cut back on plastic purchasing. 

By making nut butters, dips, jams, granolas, dog treats, bars, bites, and drinks at home, we can make a big dent in our plastic problem. 

While it may not be feasible to make *all* of these yourself *all* of the time, every little bit helps. 

Pick one or two f these easy vegan and gluten-free recipes to add into your weekly rotation.

Lately I’ve been thinking a *lot* about Spring-cleaning.

It’s been a universal theme lately in my circles, popping up on podcast episodes, in yoga sessions, and in my group texts. 

Clearing out the old junk and making room for the new.

I always feel raw and reborn in the Spring-time, emerging from a winter cocoon with pasty legs sticking out of flowing floral springs skirts and dresses. 

Yesterday I saw friends and family I hadn’t seen in person in over a year, which in itself was a rebirth, a sense of returning and renewal. 

As I air-hugged goodbye, I felt hope that with this renewal, maybe air-hugging will soon be a thing of the past.

But until then I’ll close the distance between you and me the way I know best, with some delicious recipes. 

I can’t quite believe how early Easter is this year– it’s in the first week of April! 

I love how Easter marks the beginning of Spring, the kick off for bountiful bright farmer’s market produce, and of colorful candies and treats.

It’s true, I think we should be expressing and acknowledging our love, and self-love, all year round.

Although, sometimes it’s the novelty of having a day set aside, one specifically to be grateful for all the love we’re fortunate enough to give and receive.

January is stereotypically the time of year of start plans. 

New workouts, new diets, resolutely resolving to break bad habits and add healthy routines. 

By now, you might have heard me talking about the cookbook that I’m working on.

The theme is Vegan Meal Prep and includes mix and match recipes for how to be plant-based even when life is crazy (which it always is– right?).

It’s funny, because I feel like I’m carefully crafting a product that I would  love to consume.

Meaning, that yes, I too, would covet a collection of vegan & gluten-free recipes that take the guesswork out of meal time. 

So I’ve been working my way through the F&V archives, drawing inspiration from my favorite easy-to-prep plant-based recipes. 

While making my meal prep list, I thought, why not share this resource with you guys, too?

Therefore, it could easily be argued that *all* F&V recipes are meal-prep-able.

I can’t quite believe there is less than one week left in 2020.

It feels like the year simultaneously took *forever* and yet  no time time at all, doesn’t it? 

Half of me still feels frozen in March, hunkered down at home, canceling plans, hoarding frozen foods, and obsessively watching the news. 

I’m starting to organize virtual plans for New Years Eve; maybe a game night or maybe just enjoying some bubbles and conversation with friends.

This time last year I was coordinating my dress, shoes, and hair for a girls night out with a group of fun gals in the city.

But just because the wild NYE parties are cancelled this year doesn’t mean the eats are. 

This is the perfect opportunity to throw together a bunch of plant based apps to ring in the new year healthy and satisfied! 

The  *one* thing I always struggled with at parties or gatherings was a lack of vegan appetizers.

I love creating them for the blog to show how easy it is to make plants, well…appetizing!

Do you have any holiday baking traditions? 

Growing up, we made sugar cookies carefully cut into bells, snowflakes, stockings, and angels dusted in red and green sprinkles.

After leaving home, my “go to” cookie became the Peanut Butter Kiss Cookie; infamous in my circle of friends and family for their peanut-buttery base and soft chocolate center. 

Last year my girlfriends invited me over to bake Christmas cookies.

It warmed my heart to shuffle around my friend’s kitchen, happy to pass measuring spoons and chocolate chips and vanilla extract. 

There’s something about baking together in a warm, sweet smelling kitchen that makes pre-holiday days truly feel like the most wonderful time of the year.

This Thai Carrot Sweet Potato Soup is made on the stovetop with root vegetables and yellow curry paste blended with a spoonful of nut butter. I used a standing blender but you can also use an immersion blender to achieve the creamiest consistency.

M and I have plans to visit True Food Kitchen this M and I have plans to visit True Food Kitchen this week for V-Day and it reminded me of this Harissa Toasted Cauliflower I made inspired by their menu item. Whether you love TFK as much as I do, you’re going to be obsessed with my version of this cauliflower! It’s baked and then coated in a tahini sauce and topped with fresh herbs, cranberries, and hazelnuts. Enjoy it as an appetizer or side! Cozy and delicious all year round.

My personal favorite vegan truffles are these Caca My personal favorite vegan truffles are these Cacao Dusted Dark Chocolate Truffles. 🍫 They’re *so* easy to make with dark chocolate, coconut milk, and a light cacao powder finish. Perfect for a simple decadent treat or to gift to someone special! 😉
