Happy Sunday.

Honestly, I’m acknowledging what day it is more for me than for you, because all of the days are starting to run together here.

We’re living through such a weird time!

I’ve always viewed home as my safe space, the place I come back to to recharge between work and adventures with friends.

But I never thought it would have to become my solo sanctuary for weeks on end.

Whenever my crazy starts to feel unbearable, I throw on my shoes and walk winding loops around my neighborhood.

I’m still training for my half marathon in December, so that’s a LOT of paved residential loops, friends!

Meanwhile, my freezer is doing just fine.

I’m keeping myself stocked with my favorites as much as possible so I can throw together fresh meals without frequent grocery trips!

This Cauliflower Rice Veggie Burger Bowl is currently on repeat here and I eat it almost daily for a quick power bowl.

It’s super versatile, so grab a cauliflower rice blend, your favorite veggie burger, and your favorite toppings.

Aside from the fact that grocery visits currently feel a lot like shopping in an eerie post-apocalyptic world, I’ve been lucky to be able to stock up on the basics.

When I was checking out at the grocery last week, the masked and gloved cashier asked me with a smile I could hear but not see, “Did you take all of my bunker veggies???” motioning at the multiple bags of cauliflower rice moving towards her on the conveyer belt.

I laughed and said, “I’m trying to!”, trying to express as I continued to unload my overflowing cart that this was LOVE buying and not FEAR buying.

If you’ve checked out My Top Plant-Based and Gluten-Free Pantry Staples, you know I love having bags of frozen cauliflower rice on hand to serve as the base to bowls.

Well, I was so excited to find a bunch of them at Sprouts last week that I *might* have bought about a dozen.

My favorite blend is from Cascasdian Farms with stir-fry veggies!

They also have a blend with roasted sweet potato and kale that is delicious too.

They also had my favorite Hilary’s Eat Well World’s Best Veggie Burgers, so I swiped a few boxes for my cart, too.

So, maybe, like me, you’ve got the full freezer at max capacity and it needs a little breathing room?

The beauty of this quick freezer- friendly recipe is that you can make it in 10 minutes flat with zero prep time.

The cauliflower rice and veggie burger both take approximately 10 minutes to cook on separate burners.

That’s it!

No fancy kitchen equipment, meal prep, or fresh ingredients required.

Once they’re done cooking  we bring them together in a bowl with your favorite toppings for a quick and comforting burger bowl.

You’re going to love the combination of warm tender crisp cauliflower rice topped with a browned and toasting veggie burger.

Here’s my trick.

I use an entire bag of cauliflower rice as the fluffy veggie- base for a power bowl!

If this seems like a *lot* of cauliflower rice, feel free to save whatever veg you have left as the pre-made base for another bowl.

I love these blends because they’re peppered with other veggie, too, taking the pressure off of the cauliflower.

This also ensures you don’t need to steam any extra veggies on the side– they’re already included!

The one thing that I do add is a giant handful of spinach in the last few minutes of cooking to get in those leafy greens.

I left my cauliflower rice naked, but you can go crazy with a pinch of salt, garlic, spices, and seasonings to create different variations!

This Cauliflower Rice Veggie Burger Bowl is perfect when you’re in a pinch and need a quick bowl of plants from the freezer, fast!

Use this recipe as a blueprint and create your own variations based on the cauliflower rice blend and veggie burger flavor you choose.

You can also create different flavor profiles via the toppings you select!

Some of my go-to favorites are avocado, salsa, and hummus.

Some other delicious additions are hot sauce, fresh herbs (if you have them on hand), and tahini!

If you’re looking for a little extra protein, try adding legumes or quinoa.

Description

Cauliflower rice bowl with a meatless vegetable burger and your favorite toppings. Perfect for a quick plant-based freezer-friendly meal!


Ingredients

  • 2 tsp avocado oil, divided
  • 1 12 oz. bag of frozen cauliflower rice blend (I like this kind)
  • Hilary’s Eat Well: World’s Best Veggie Burger (or sub your favorite meatless veggie burger)
  • 1 giant handful of fresh spinach
  • Optional toppings: avocado, salsa, hummus, tahini, etc.

Instructions

  1. Prepare a small skillet and large skillet on the stovetop with a tsp of avocado oil in each. Heat the skillets over medium heat.
  2. Add the veggie burger to the small skillet and the contents of the cauliflower rice bag into the other. Cover the cauliflower rice with a lid.
  3. Cook the both for a total of 10 minutes, stirring the cauliflower rice frequently to prevent burning and flipping the veggie burger at the half way point*. I like to set 2 separate minute timers. When the 5 minutes are up, flip the veggie patty. Reset the timer for another 5 minutes. When the last timer has 3 minutes left, remove the lid from the cauliflower lid, stir, and add a giant handful of fresh spinach on top. Replace the lid and heat until the spinach is completely wilted. Remove the lid, stir, and cook uncovered for the the last 1-2 minutes to allow any excess moisture to cook off.
  4. While the veggie burger and cauliflower rice are cooking, prepare your desired toppings. I love doing a mix of salsa, hummus, and avocado.
  5. When the cauliflower rice and veggie burger are done, remove from heat. Cauliflower rice is done when tender crisp and steaming, and veggie burger is done when. lightly browned on both sides.
  6. Add the cauliflower rice to a bowl and top with the veggie burger. Garnish with desired toppings and serve hot. Enjoy!

Notes

*Depending on your stovetop, you may need to cook the veggie burger for longer on the first side. Usually I split mine 7/3 minutes instead of 5/5 because it takes longer for the first side to cook and much less for the second. Eyeball the doneness based on browning! This will also depend on what brand of veggie burger you decide to use.

I started teaching yoga again this spring. In the I started teaching yoga again this spring. In the midst of cookbook edits and stunning spring weather, I felt called to unfurl my Manduka mat and talk my friends and family through a feel-good flow.

At first, I felt rusty; stumbling through cues and postures. What’s that pose, again? What’s that body part? I forgot options; I forgot pacing, I forgot to balance active poses with rejuvenating rest.

But I’m starting to get it back. The confidence that comes with repetition. The joy that comes from seeing a student let go, watching tangible tension melt away; I’m an audience to mindfulness.

I wanted to become a yoga teacher because it felt like the single greatest gift I could give to another human being. Maybe that’s because it’s one of the greatest gift that I give to myself.

As I get back into teaching, I’m reminded that crafting yoga classes is a beautiful, delicate artform. One that I’m excited and eager to get better at.

I teach vinyasa yoga—A creative flow. I’m currently working on theming my classes—conveying a subtle suggested message through movement, music, and words.

Last Friday I taught my book club and I spent hours working on the soundtrack and the sequence. I shifted around openings and contractions, counted things in threes, and shuffled songs in a clear crescendo towards peak posture, softening into savasana.

It reminded me of the English classes I took in high school. We tirelessly underlined paperback books, searching for themes, motifs, and expressive language with a pink highlighter and red ballpoint pen.

Writing a yoga sequence is kind of like that, but in reverse. This time I’m the author, the creator, the conductor, sprinkling in symbols and allusion and foreshadowing to guide towards the truest version of you.

I strive to talk through the poses with expressive language and concise cues. Watching for reactions, feeling what the collective is feeling, working with them to achieve a union of mind, body, and spirit.
