This is the story of my engagement.
On Halloween last week M and I hiked into Great Falls National Park where he got down on one knee and presented me with a diamond ring and a question.
“Would you like to marry me?” he asked, the midday sun creating fiery colors in the pear shaped diamond in yellow gold.
“Yes!” I said immediately, wondering if I had responded too quickly.
We kissed and M slid the diamond onto my ring finger as people I didn’t know were there gave their congratulations.
So, friends, I am engaged.
The funny thing is that I almost didn’t want to go on this hike that I realize now M was carefully planning.
There was really high winds forecast for the day and that felt like reason enough to curl up at home and read under blankets.
I’m forever grateful that we ended up going and I braved the discomfort.
Great Falls has always been a special place for us in our relationship.
It’s the first place M taught me to climb outdoors in the height of the pandemic, and a place we kept coming back to for hiking, climbing, and nature.
Standing on top of Sandbox Overlook with my new fiancé, my best friend, this man who has chosen me forever, I didn’t feel the windchill a bit.
The last week has been a bit of a blur with engagement announcements, living in our own “honeymoon” bubble, and making tentative plans for the future.
Being newly engaged, I’ll admit, I haven’t been the most creative with food.
However, I did come up with a new baked oats recipe for you that’s essentially a cookie in baked oats form.

It’s easy to meal prep a pan and reheat for an easy breakfast all week long!
What You Need to Make Cinnamon Raisin Cookie Baked Oatmeal
The chances are pretty high that you have everything you need to make these baked oats already in your pantry.
That’s because these baked oats don’t require any *fresh* ingredients.
Think of it like making in cookie, in baked oats form.
On TikTok, I once heard someone give the analogy that baked oats is to oatmeal what bread pudding is to bread.
This makes a lot of sense!
It’s a version of the original but a bit more moist, gooey, and condensed than other baked goods.

With that in mind, here’s what you need to make Cinnamon Raisin Cookie Baked Oatmeal:
- ground flaxseed
- unsweetened almond milk
- pure maple syrup
- coconut sugar
- neutral nut butter
- gluten-free old-fashioned oats
- ground cinnamon
- raisins (or sub dark chocolate chips!)
- chopped nuts (pecans, walnuts, etc.)
That’s it!

How to Make Cinnamon Raisin Cookie Baked Oatmeal
These baked oats are super easy to bake on any day of the week!
Preheat the oven to 375°F and line a 9×9 square baking dish with parchment paper or lightly grease with coconut oil.
In a large mixing bowl, mix up the flax egg and allow to sit for 5 minutes to gel.
Next, add in the almond milk, maple syrup, coconut sugar, and almond butter and stir well to combine.
Add in the oats, cinnamon, raisins, and chopped nuts and stir well to combine.
Fold in the raisins and chopped nuts.
Spoon the mixture into the baking dish and spread into an even layer.
Top with more mixed nuts and raisins.
Bake for ~45 minutes, until the top is nice and golden brown.

Swaps & Substitutions
Now, I know that raisins are kind of polarizing.
You either love ’em or you hate ’em.
Which team are you on?
I grew up on oatmeal raisin cookies so in my mind oatmeal and raisins just…belong together.
However, if you think that raisins are just humiliated grapes (name that move reference!), I have a secret swap for you.
Swap out raisins and add chocolate chips in a 1:1 ratio.
This way you still get that “oatmeal cookie” feel, but with chocolate instead of dried fruit.
You could also do dried cranberries or another dried berry here, too, if you’d like!
For nuts, I like chopped pecans or walnuts for the best texture and flavor.

Notes on Meal Prep
Remove the baked oatmeal from the oven and allow it to cool for a few minutes before slicing and serving.
