It’s a white winter wonderland outside, friends.
We got our first big snow storm here in Virginia over the weekend.
The weather stations all gave a wide range in snowfall accumulations, so I rolled my eyes and made the grocery trip before the storm just in case.
I’m grateful now because we ended up getting close to a foot of fluffy white stuff; the kind of snow that’s perfect for snowmen and snowballs.
While I didn’t make a snowman, but we did get outside to romp around on a family walk.
Harper absolutely loved bounding through the woods with white stuff covering her snout and eyelashes.
When we got inside I was ready for a warm breakfast.
I created this bowl of porridge that will have the goldilocks and the three bears coming back for seconds.
This Cream of “No Wheat” is just as quick as the classic with a hearty grain-free blend of nuts and seeds.
What You Need to Make Cream of “No Wheat”
I went through a big classic cream of wheat phase growing up.
How about you?
I wasn’t a big texture person back in the day, so I loved the way the smooth cereal slid down with my orange juice.
So what makes a creamy cream of wheat without the wheat?
A blend of ground nuts, coconut flour, ground flaxseed, and chia seed create the cozy base for this hot cereal.
It’s easy, convenient, and filling.
How to Make Cream of “No Wheat”
Remember those clumps that formed in the classic cereal mix that we steadily steered our spoon around?
No clumps and bumps here, buds.
The fine blend creates a nutty taste and fluffy smooth texture with lots of protein and fiber to boot.
Similar to the instant version from childhood, you simply heat the almond milk over the stovetop and pour over the mix.
The warm milk cooks the no-grains in a matter of minutes, thickening the grounds to a creamy porridge-consistency.
Mmm.
How to Serve Cream of “No Wheat”
Enjoy this Cream of “No Wheat” (Grain-Free!) as an easy 5-minute breakfast or snack.
It’s perfect for quick morning fuel or a light morning or afternoon snack.
For ease in mixing, try measuring out the dry ingredients into separate ziplock bags or small containers.
In the morning, pour the pre-mixed serving into a bowl and build your bowl with zero measuring required.
Add maple syrup or date paste to sweeten to your desired taste.
For toppings I went with fresh berries, slivered almond, hemp hearts, and chia seeds.
Anything goes here, so pile on your favorites.

Description
Cream of “No Wheat” made grain-free with almond flour, shredded coconut, nuts, and seeds. The perfect alternative to oatmeal!
Ingredients
- ¼ cup superfine almond flour
- 2 TBSP unsweetened shredded coconut
- 2 TBSP ground flaxseed
- 2 TBPS coconut flour
- 1 TBSP chia seeds
- dash of cinnamon
- 1 cup unsweetened almond milk + more as needed
- 1–2 TBSP pure maple syrup (optional)
For serving
- fresh berries
- nut butter
- chia seeds
Instructions
- Mix the almond flour, unsweetened shredded coconut, flaxseed meal, coconut flour, chia seeds, cinnamon, and Himalayan sea salt in a small bowl.
- Heat the almond milk until it’s almost boiling, then pour it over the dry ingredients and stir until combined. Allow to sit for 2-3 minutes to thicken.
- Add optional maple syrup to reach your desired sweetness.
- Serve the cream of “no wheat” with our favorite toppings of choice, like fresh berries, nut butter, chia seeds, etc.

This was so good!!!! And so easy to make. The texture was amazingly like cream of wheat. Loved it!!! Only needed a small amount of maple syrup to sweeten.

This is an amazing recipe! I reduced the amount I cooked to 1/4 cup of cereal and 1/3 cup of hot milk and it worked beautifully! Now I have some left over for my next meal. I’ll definitely be making it in bulk for future breakfasts.
I wasn’t a fan of the hemp hearts but that’s optional, I also think I’ll use sweetened shredded coconut and I may not need another sweetener at all! It was very delicious and slightly sweet so that little added touch might just do it!

I tried this today for lunch. It was delicious I left out the cinnamon so could get the real taste of the cereal. Will try adding it next time. Also I used 1/4 cup regular milk and 1/4 cup half and half.
I will be making the dry ingredients into 1/2 recipe portions in snack bags so all i have to do is heat the milk and add the cereal fire a quick, easy,, delicious breakfast.
I have no coconut flour on hand; what can I use instead?
Deeeelicious Had it with blue berries and sliced almonds. Will try and make it for the husband next time, but with hazelnut meal since he has an almond allergy.

This was really good! The texture is amazingly like cream of wheat and I liked the flavor. I topped it with berries and nuts and omitted the optional maple syrup, but it did seem like it was missing a little sweetness so I would like to add just a touch of the maple next time. I will definitely make this again and try out different toppings and spices (I liked someone’s idea about pumpkin pie spice, I’m definitely going to try that!)
