SunButter Stuffed Dates for a sweet snack or dessert made with juicy dates and sunflower seed butter. Add your own toppings to make your own variation!

SunButter Stuffed Dates served in white baking dish topped with freeze-dried raspberries by Flora & Vino

This week I rejoined my gym and it sort of felt like I was being disloyal to my yoga studio when I signed the paperwork to make my membership official.

Now I find myself in a sort of gym/yoga limbo, unsure of which class to go to after the studio is tidied up and the dishwasher is full.

Can I just do it all?

I did my first weight-training (BodyPump!) class tonight in over a year and it felt good to push and pull things other than my camera equipment and the free-weights upstairs.

Getting back in the training zone reminded me of one of my absolute favorite pre/post workout treats– stuffed dates.

These SunButter Stuffed Dates are ridiculously easy to make and oh so satisfying.

Grab some SunButter and let’s have a date.

A date date.

Get it?

In case you’re thinking, “Lauren, why make this simple recipe into a full blog post?”

I’ve always loved documenting (ask the giant box of journals upstairs with my most intimate thoughts grade 6-12), and these simple stuffed dates represent a pivotal point in my food journey.

Because I wish someone had told me, say, ten year ago, about the easy joy found in dipping dates in sunflower seed butter.

There’s nothing quite like sinking your teeth into caramel-y dates and rich velvet-y SunButter.

If two ingredients can taste this good smashed together…what other minimalist mind-blowing combos am I missing out on?!

So now you know the secret of life.

You’re welcome.

What You Need to Make SunButter Stuffed Dates

For this recipe, you really need just two things.

Sunflower seed butter and dates.

I’ve dipped my fair share of dates in a variety of nuts and seed butters, but believe me when I tell you that SunButter is the BEST.

Something about roasted sunflower seeds and dates just works.

Pro tip: Use the absolute freshest gooiest Medjool dates you can find– it’ll make the stuffing that much sweeter.

Toppings for SunButter Stuffed Dates

I thought you should know that the dates I usually eat stuffed with SunButter never look quite this photogenic.

Usually there’s a lot more of a smashed asymmetrical vibe going on, but they taste incredible just the same.

Regardless, I had fun dressing them up here with some of my favorite garnishes.

For optional toppings, I went with crushed freeze-dried raspberries and shaved dark chocolate.

Some other ideas are crushed walnuts, hemp hearts, cinnamon, sea salt, or granola.

I’d love to hear your favorites!

Why Eat SunButter

Recently, one of my girlfriends was looking for date recipes to nudge along her pregnancy– I wish I had delivered these for her during that time!

She’s got a beautiful baby girl now but I bet she could still use a date date.

Like most Sweets & Treats on the blog, these SunButter Stuffed Dates are equally nutritious and delicious.

Sunflower seed butter is an excellent source of protein and healthy fats, while dates add complex carbohydrates and natural sweetness.

No added sugar necessary, here, friends– these morsels are sweet and indulgent all on their own.

How to Serve SunButter Stuffed Dates

These SunButter Stuffed Dates are ideal for a quick snack, dessert, or pre/post workout fuel.

You can find me spooning a jar of SunButter and a container of fresh dates after a workout when I’m too famished to make food but too hungry to leave the kitchen.

Make a few low-key as a simple snack, or dress them up on a big platter with garnishes to share.

Leftovers can be stored in the fridge for several days, but I think they taste best gooey and fresh.

They’d also be a great stuffing for an after school snack or fun interactive dessert for kids!

To keep them nut-free, it’s easy, just make sure to leave off any nut garnishes.

Enjoy!

Just a *drop* adds a big kick to your dressings, marinades, stir-fries, etc. If you have a wild side, add a drop or two to your soup bowl for a little extra heat!

Feel free to add your favorites, like roasted chickpeas, green onion, and sesame seeds.
