Recently, I keep seeing the cutest containers of coconut rolled dates at my local Mom’s Organic Market.

Multiple times now the container has almost made it into my cart, until I quickly chastise myself because…I could make that.

So finally I did.

These 4 Ingredient Coconut Almond Rolled Dates are the simplest treat that require only a handful of ingredients you’ve already got in your cabinet.

The week between Christmas and New Years always seems a bit ghost-like, doesn’t it?

We’re daydreaming through a workweek stranded between two major holidays.

The anticipation of the new year is tangible, but 2017 hangs on hard for seven long days.

4 Ingredient Coconut Almond Rolled Dates

I simultaneously want to do everything and nothing at the same time, you know?

I haven’t done either very well, though, because Dan caught a nasty cold over the weekend and I caught his.

Maybe I had a few too many cookies.

You bet I’m drinking my kombucha, eating my leafy greens, and manifesting my speedy recovery hard to start off 2018 with wellness.

If you had a few too many cookies, too, or are totally dessert-ed out after a sweet Christmas, these Coconut Almond Rolled Dates are for you.

I know it’s a bit cliche, but like most of the population, I’m focusing on my sugar intake in January.

I always strive to be refined sugar free and low sugar where possible to keep my blood sugar levels regular.

These treats are sweet only from the dates themselves, without any added sugars!

One bite of these are you will have no doubt that dates are indeed nature’s candy.

Enjoy these 4 Ingredient Coconut Almond Rolled Dates as a deliciously simple snack, dessert, or anytime treat.

I think the shredded coconut makes them look festive and snowy, making them the perfect healthy addition to your New Years Eve spread.

For a more formal presentation, try tolling the mixture into one giant “roll” and slicing into round that way to serve.

I’m fond of these cuties as single serve “rolls”, though.

Try them with an additional almond centerpiece to add some crunch!

Description

Skip the store bought coconut rolled dates and make your own in under 10 minutes. A quick and clean dessert or snack made with only 4 ingredients.


Ingredients

  • 1½ cups fresh dates, pitted and packed
  • 3–4 TBSP creamy almond butter
  • 1/4 cup raw almonds
  • ¼ cup shredded coconut, unsweetened
  • optional: additional raw almonds to stuff in center

Instructions

  1. Add dates, almonds, and almond butter to a high speed blender or food processor and pulse until a thick paste forms, scraping down the sides as needed to recombine.
  2. Form the mixture into 1-1¼ inch balls and place on a parchment lined sheet pan.
  3. Press a single almond into the center of the ball, if desired.
  4. Pour the coconut onto the pan and roll the date balls in the coconut with the palms of your hand, flattening them to achieve an oblong shape.
  5. Serve immediately. Store leftover Coconut Rolls Dates in an airtight container in the fridge for up to one week.

I started teaching yoga again this spring. In the I started teaching yoga again this spring. In the midst of cookbook edits and stunning spring weather, I felt called to unfurl my Manduka mat and talk my friends and family through a feel-good flow.

At first, I felt rusty; stumbling through cues and postures. What’s that pose, again? What’s that body part? I forgot options; I forgot pacing, I forgot to balance active poses with rejuvenating rest.

But I’m starting to get it back. The confidence that comes with repetition. The joy that comes from seeing a student let go, watching tangible tension melt away; I’m an audience to mindfulness.

I wanted to become a yoga teacher because it felt like the single greatest gift I could give to another human being. Maybe that’s because it’s one of the greatest gift that I give to myself.

As I get back into teaching, I’m reminded that crafting yoga classes is a beautiful, delicate artform. One that I’m excited and eager to get better at.

I teach vinyasa yoga—A creative flow. I’m currently working on theming my classes—conveying a subtle suggested message through movement, music, and words.

Last Friday I taught my book club and I spent hours working on the soundtrack and the sequence. I shifted around openings and contractions, counted things in threes, and shuffled songs in a clear crescendo towards peak posture, softening into savasana.

It reminded me of the English classes I took in high school. We tirelessly underlined paperback books, searching for themes, motifs, and expressive language with a pink highlighter and red ballpoint pen.

Writing a yoga sequence is kind of like that, but in reverse. This time I’m the author, the creator, the conductor, sprinkling in symbols and allusion and foreshadowing to guide towards the truest version of you.

I strive to talk through the poses with expressive language and concise cues. Watching for reactions, feeling what the collective is feeling, working with them to achieve a union of mind, body, and spirit.

These are vegan and gluten-free “Tagalong” cookies with an almond  butter twist! They’re easily made with almond flour, almond butter, maple syrup, and dark chocolate. The recipe is very easy to make with simple whole foods ingredients that you probably already have on hand!
