These Brownie Batter Overnight Oats are basically a gooey brownie in breakfast form, made with lots of cacao, chopped walnuts, and dark chocolate chips.
And you can make them in just 5 minutes for an easy breakfast for the weekend ahead.
I meal prepped them for my birthday weekend trip a few weeks ago, and I was so grateful to have them stacked in the Air B&B refrigerator.

What You Need to Make Brownie Batter Overnight Oats
These Brownie-themed ONOs are super easy to make with ingredients you probably already have in your pantry.
Here’s what you need:
- Bob’s Red Mill Gluten Free Organic Old Fashioned Rolled Oats
- chia seeds
- chocolate protein powder
- unsweetened almond milk
- raw cacao powder
- pure maple syrup
- nut butter
- vegan dark chocolate chips
- chopped walnuts

How to Make Brownie Batter Overnight Oats
Mixing these Brownie Batter Overnight Oats up will probably be the easiest thing you’ve done all day.

Add the oats, protein powder, almond milk, cacao powder, maple syrup, and nut butter to a mason jar.
Stir everything well to combine, then seal the container with a lid and place in the refrigerator overnight.

Soaking them overnight makes them super creamy with just enough texture to be interesting.
Notes on Meal Prep
These Brownie Batter Overnight Oats were born for meal prep.
This recipe serves two, but you can double or triple the recipe to make more overnight oats for the entire week.
Overnight oats will keep in the refrigerator for up to one week.
I recommend storing any toppings separately and adding them just before serving.
This way, your toppings stay crunchy and won’t get soggy.
How to Serve Brownie Batter Overnight Oats
The next morning, divide the oats into two servings.
Add a bit more almond milk if the consistency is too thick.
If the mixture is too thin, stir in extra chia seeds or protein powder to thicken it.
Serve the Brownie Batter Overnight Oats chilled topped with dark chocolate chips and chopped walnuts.
