Hi, friends! 

This week I officially started my structured marathon training. 

Sure, I’ve been running this year with the marathon in mind, but I haven’t been following a *plan*. 

And if you know me, you know I *love* a good plan. 

So this week after getting back from Germany I started the Nike Marathon training plan.

Initially, it looks scary, but broken down it’s really just 2 shorter runs per week and one longer endurance run. 

I’m also excited to try out my new hydration pack and hydration tablets into my training!

Since I’ll be running more, I’m going to need more healthy snacks and meals. 

Bananas are wonderful for post-running fuel, so I’ve been enjoying them in fun ways after jogging into my kitchen. 

This Peanut Butter & Banana Chocolate Chip Chia Pudding is the latest in my banana bonanza. 

This delicious chia pudding is perfect to meal prep for warmer weather!

What You Need to Make Peanut Butter & Banana Chocolate Chip Chia Pudding

Here’s what you need:

  • banana
  • peanut butter 
  • Navitas Organics Chia Seeds
  • Navitas Organics Hemp Seeds
  • dairy-free dark chocolate chips 
  • unsweetened almond milk

That’s it!

How to Make Peanut Butter & Banana Chocolate Chip Chia Pudding

Making this Peanut Butter & Banana Chocolate Chip Chia Pudding is super simple.

Here’s how I make mine for the best texture and consistency.

First, smash the banana in a mason jar with the peanut butter.

Add in the chia seeds, hemp seeds, chocolate chips, and the unsweetened almond milk and mix everything until it’s well combined.

I like to let the mixture to sit for ~5 minutes, then stir again to recombine as the chia seeds start to plump up.

Cover the mixture and refrigerate it overnight or for at least 4 hours. 

You want the chia pudding to be thick and the chia seeds fully expanded before serving. 

The next day, serve the pudding with more sliced banana, dark chocolate chips, peanut butter, and cacao nibs.

How to Serve Peanut Butter & Banana Chocolate Chip Chia Pudding

Enjoy this Peanut Butter & Banana Chocolate Chip Chia Pudding as a delicious snack or breakfast. 

This recipes serves one, so you can double or triple the recipe for more servings. 

I like to meal prep multiple jars to have on hand for easy snacking throughout the week. 

Feel free to add whatever toppings you have on hand. 

Some other fun ideas are chopped nuts, granola, dried or fresh fruit, and shredded coconut.

To make this recipe nut-free, sub the peanut butter for sunflower seed butter instead.

Description

Peanut butter & banana chocolate chip chia pudding that’s naturally sweetened with banana. Perfect to meal prep for breakfast or a snack!


Ingredients

  • 1/2 banana, smashed + second ½ sliced for topping 
  • 1 TBSP peanut butter 
  • 1 TBSP Navitas Organics Chia Seeds
  • 1/2 TBSP Navitas Organics Hemp Seeds
  • 1 TBSP dairy-free dark chocolate chips 
  • 1/4 cup unsweetened almond milk

For serving

  • sliced banana
  • dark chocolate chips
  • peanut butter
  • Navitas Organics Cacao Nibs

Instructions

  1. Mash the banana in a mason jar with the peanut butter. Add in the chia seeds, hemp seeds, chocolate chips, and the unsweetened almond milk and mix everything until it’s well combined. Allow the mixture to sit for ~5 minutes, then stir again to recombine as the chia seeds start to plump up. Cover the mixture and refrigerate it overnight or for at least 4 hours. 
  2. The next day, serve the pudding with more sliced banana, dark chocolate chips, peanut butter, and cacao nibs.
  3. Store the chia pudding in the refrigerator for 3-5 days.
