I’ve made an exciting and daunting new goal for the year ahead: read 50 books in 2025! 

So far, I’ve completed 4, so it feels like I’m off to a pretty good start. 

My plan to achieve this goal is to hit the target from two fronts: audiobooks and kindle reads. 

During the day, I love to have a self help-y, conversational, motivational read on during the day while I’m shooting a recipe, testing food, or cleaning the dishes. 

I just finished Mel Robbins’ The Let Them Theory and am delighting in saying, “Let Them!” to everything applicable.

(And so many things are applicable…IYKYK.)

By night, M and I have settled into a routine of snuggling up with our kindles and a glass of wine or kombucha while Flora takes a (much needed) nap before dinner. 

Right now, like so many of you, I’m making my way through Onyx Storm, the 4th and long awaited book in Rebecca Yarros’ Fourth Wing series. 

So, I’m hoping with this routine I can actually accomplish my 50 books this year! 

I re-realized recently just how much joy reading brings me, so I want to prioritize reading even above podcasts and TV and definitely above social media consumption.

Whenever we’re having our reading party upstairs while the pup naps, snacks are always welcome. 

These Savory Stuffed Dates are served with vegan cream cheese, crushed pistachios, maple syrup, and hemp and chia seeds.

They’re perfect for an elevated appetizer!

What You Need to Make Savory Stuffed Dates

If you’re like me, you might all of the ingredients for these Savory Stuffed Dates already at your disposal. 

Raid the fridge and pantry and see what you can find!

Here’s what you need:

  • Medjool dates
  • vegan cream (homemade or store bought)
  • roasted pistachios, roughly chopped
  • maple syrup, optional
  • Navitas Organics Organic Hemp Seeds
  • Navitas Organics Organic Chia Seeds

How to Make Savory Stuffed Dates

Making these Savory Stuffed Dates is super easy, and you can whip them up in under 5 minutes on the spot.

Slice all of the Medjool dates lengthwise down the center and remove the pits.

To prepare the dates, stuff the center of each date with 2-3 tsp of vegan cream cheese.

Sprinkle the dates with the chopped pistachios. 

Drizzle the dates with a tiny bit of optional maple syrup, or skip this step if you want. 

I personally love mine without the maple syrup, because dates are like nature’s candy all on their own!

Brand Notes

Next, I like to finish my dates by sprinkling them with some superfoods like hemp and chia seeds. 

We use Navitas Organics Organic Hemp Seeds and Navitas Organics Organic Chia Seeds to top these dates with nutrition.

I love adding hemp seeds because they are a rare plant-based source of complete protein and omega-3s!

These buttery, soft, nutty seeds are a great topper for anything. 

Chia seeds aren’t *just* for chia pudding, friends! 

While being packed with omega-3’s, protein, and fiber, they’re also great to top any snack or meal. 

I like to sprinkle a few of each seeds on top of the dates as the finishing touch. 

The seeds will stick nicely to the vegan cream cheese.

Swaps and Substitutions

To keep these savory stuffed dates simple and sweet, I opted to use a store-bought vegan cream cheese.

However, you can absolutely make your own using cashews, tofu, coconut cream, or a mix of all of them. 

For the nuts, I love the aesthetics and flavor of pistachios, but peanuts, walnuts, or cashews would be tasty, too. 

Try swapping the maple syrup sweetener with another liquid sweetener like agave syrup, date syrup, or honey (if you’re beegan!).

Mix up the seeds by adding pumpkin seeds, sunflower seeds, or sesame seeds in addition to the chia and hemp.

Notes on Meal Prep

While I prefer making these Savory Stuffed Dates just before serving, they’re also meal prep-able.

If you’re preparing these Savory Stuffed Dates in advance for an event, here are some tips. 

You can store the dates stuffed with cream cheese in the refrigerator for up to 3 days.

I recommend waiting to drizzle the maple syrup and sprinkle the hemp and chia seeds until right before serving.

This way, the hard work of pitting and stuffing the dates is done, and all you need to do is decorate!

How to Serve Savory Stuffed Dates

These savory stuffed dates are perfect for a quick and satisfying snack or an elegant appetizer. 

I absolutely love the combination of gooey sweet Medjool dates with salty and rich cream cheese. 

You can make them in advance and store them in the fridge for later, but I love making them on the fly.

They’re so easy to assemble in less than 15 minutes! 

Whip them up the next time you need something special to serve for bookclub, girl’s night, or date night in. 

You’re going to love how decadent it tastes while being packed with complex carbs, healthy fats, and protein to keep you happy and satiated.

Description

Ingredients

  • 12 Medjool dates
  • 1/2 cup vegan cream (homemade or store bought)
  • 2 TBSP roasted pistachios, roughly chopped
  • 1 TBSP pure maple syrup
  • 1 tsp Navitas Organics Organic Hemp Seeds
  • 1 tsp Navitas Organics Organic Chia Seeds

Instructions

  1. Slice all of the Medjool dates lengthwise down the center and remove the pits.
  2. To prepare the dates, stuff the center of each date with 2-3 tsp of vegan cream cheese. Sprinkle the dates with the chopped pistachios.

  5. Store stuffed dates in the refrigerator for up to 3 days. Wait to drizzle the maple syrup and sprinkle the hemp and chia seeds until right before serving.
