And the countdown to the new year keeps marching on. 

It’s the silent prayer on everyone’s lips…2021. 

Last night I attended an intention setting and new year manifestation virtual yoga class. 

The class was divided into three themed segments where we moved and breathed into our past, present, and future. 

It was a beautiful 75 minutes, and looking backwards and forwards made me feel a lot more grounded in the here and now. 

So, here we are, with days left in what many people are calling the hardest year of our lives. 

In reflecting in an Instagram post this past week, I realized that while this year was so devastatingly hard in so many ways, it also inspired personal growth at an accelerated rate. 

And most of it feels pretty good. 

I’m also feeling pretty good about ending the year snacking on Oil-Free Roasted Spiced Chickpeas.

They’re baked with your favorite seasonings and zero added oils for an easy protein-packed snack and make the perfect addition to salads and bowls!

What You Need to Make Oil-Free Roasted Spiced Chickpeas

These Oil-Free Roasted Spiced Chickpeas are *so* easy to make and crisp up without any oil!

Let me show you how. 

You’ll need:

  • Eden Foods Organic Chickpeas
  • Himalayan sea salt
  • seasonings of choice (I love a mix of curry powder, cumin, and smoked paprika)

My Favorite Chickpeas

This recipe begins with Eden Foods Organic Chickpeas.

These organic chickpeas are soaked overnight and thoroughly cooked with zero chemical additives.

I love how the have no salt added so they’re ready for whatever seasoning you throw on them! 

Eden Foods Garbanzo Beans are my personal favorite because they’re high-quality in flavor and appearance, consistently being plump, firm, and round. 

Every can is free from BPA, BPS, and phthalates! 

Drain and rinse the can of chickpeas well and pat them dry with paper towels or a dish towel.

If you’re feeling ambitious, you can remove the skin by gently rubbing the chickpeas with the towels.

This isn’t necessary but will help them get crispier!

How to Make Oil-Free Roasted Spiced Chickpeas

Next, transfer the chickpeas to a large mixing bowl with the Himalayan sea salt.

Toss well to coat the chickpeas in salt. 

Skip the oil and spread the chickpeas in an even layer on a parchment lined baking sheet. 

Bake them at 350°F for a total of 30-40 minutes or until they’re golden brown and crispy to the touch.

I recommend shaking the pan every ~10 minutes to ensure even baking!

In the last 10 minutes, remove the chickpeas from the oven, shake them to redistribute, and then toss with your desired spice mixture.

I love a mix of curry powder, cumin, and smoked paprika, but anything works. 

Some other ideas are chili powder, turmeric, and garlic powder!

How to Serve Oil-Free Roasted Spiced Chickpeas

Allow your chickpeas to cool completely before serving to achieve the ultimate crunchiness. 

Enjoy these Oil-Free Roasted Spiced Chickpeas as a protein packed snack or use them as a crunch addition to salads and bowls! 

I think they’d make a fun appetizer, snack, or garnish for plant-based meals. 

Store your leftover crisp chickpeas in an *uncovered* storage container.

It’s important to leave them uncovered so the chickpeas continue to remain crispy and don’t retain moisture.

Try loosely covering the container with aluminum foil or a lid left ajar for the best of both worlds.

Description

Oil-free roasted spiced chickpeas for an easy protein-packed snack or addition to salads and bowls. Sub in your favorite seasoning!


Ingredients

  • 1 15-oz can Eden Foods Organic Chickpeas, drained and patted dry
  • 1/2 tsp Himalayan sea salt
  • 1 tsp seasonings of choice (I love a mix of curry powder, cumin, and smoked paprika)

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper. 
  2. Drain the can of chickpeas well and pat them dry with paper towels or a dish towel. If you’re feeling ambitious, you can remove the skin by gently rubbing the chickpeas with the towels. This isn’t necessary but will help them get crispier!
  3. Transfer the chickpeas to a large mixing bowl with the Himalayan sea salt. Mix well to combine.
  4. Bake for a total of 30-40 minutes or until golden brown and dry/crispy to the touch. Shake the pan every ~10 minutes to ensure even baking. In the last 10 minutes, remove the chickpeas from the oven, shake them to redistribute, and then toss with your desired spice mixture.
  5. Allow chickpeas to cool completely before serving. 
  6. Serve as is for a protein packed snack or use as salad or bowl toppers! Store leftover spiced chickpeas in an UNCOVERED storage container so the chickpeas continue to remain crispy and don’t retain moisture.
