Last week I hung a rectangular printed canvas sign on my wall.

“Never Stop Exploring”, it reads.

All I did was press a push pin into the wall and steady the sign on it until it balanced, but it felt like a bold move.

My first intentional piece of artwork in my home.

Huzzah!

It’s funny how long I’ve gone with bare walls devoid of decorating.

To be honest, I’ve never been very confident in my indoor decorating choices.

Like, do I need a color scheme, a theme, a purpose, or do I just start throwing stuff on the walls?

I joked with a friend (who is amazing at decorating her home, I might add), that I need a design consultation. STAT.

Anyway, sometimes I catch glances of my sign while I’m eating breakfast in the morning.

Never stop exploring.

These Mango Blueberry Overnight Oats are so easy to mix up in jars in advance with oats, fresh mango, and blueberries!

Adding Mango To Your Overnight Oats

Aside from my timid attempts at indoor decorating, I’ve also been really into summer fruit lately.

A few days ago I ate a ton of pineapple, only to google afterwards…why does pineapple make my mouth hurt?!

Does this happen to you, too?

Actually, sometimes it happens to me with mango as well, but not for long.

Seriously, is there anything better than biting into a fresh slice of peeled mango?

Usually I throw mango into my blended summer shakes and smoothie, but last week I paired with blueberries in overnight oats!

The result is a fruity sweet oatmeal that you can enjoy on all of your summer getaways or staycations.

What You Need to Make Mango Blueberry Overnight Oats

Here’s what you need to make Mango Blueberry Overnight Oats:

  • gluten-free old-fashioned rolled oats
  • chia seeds
  • pure maple syrup
  • No Sugar Added SunButter
  • unsweetened almond milk
  • mango
  • blueberries

That’s it!

How to Make Mango Blueberry Overnight Oats

The jars start with gluten-free oats soaked in unsweetened almond milk.

Add in chia seeds (or sub flax seed here) to add bulk.

We keep everything naturally sweet with a drizzle of pure maple syrup.

You can use fresh or frozen mango in this recipe, but fresh is always preferred for the best flavor!

The same goes for the blueberries.

SunButter: The Secret Ingredient

The secret ingredient to these Mango Blueberry Overnight Oats is No Sugar Added SunButter.

I love adding a spoonful or two of this one ingredient sunflower seed butter to my breakfast in place of nuts or nut butter.

They only ingredient is organic roasted sunflower seeds!

Try adding a few tablespoons of this creamy seed butter to your overnight oats.

It adds a slightly nutty flavor and a rich creamy texture to make these summer inspired overnight oats extra special.

Notes on Meal Prep

Now that we have everything mixed up– we wait.

I usually make my overnight oats the night before to allow plenty of time for them to soak and thicken prior to serving in the morning.

If you make them the day-of, be sure to let them sit at least 4-6 hours for the oats to soften.

When it’s time to serve, I recommend first checking the texture with a spoon.

If your overnight oats are too runny, add a few extra teaspoons on chia or flax seed to thicken.

If they’re too thick, add in a splash of almond milk until they’re creamy enough.

How to Serve Mango Blueberry Overnight Oats

Enjoy these Mango Blueberry Overnight Oats for an easy and nutritious anytime breakfast.

The recipe below serves 2, but you can easily multiply the quantities to make double or triple to prepare multiple jars for the entire week.

Try adding in a tablespoon of your favorite vanilla protein powder for an additional boost of protein!

You can either purée your mango or finely dice it to add to your overnight oats.

I love topping mine with extra blueberries, diced mango, and shredded coconut for more fruity texture!

Description

Mango blueberry overnight oats oats, fresh mango, blueberries, and a spoonful of SunButter. Perfect for summer workweek meal prep!


Ingredients

  • 1 cup gluten-free old-fashioned rolled oats
  • 4 tsp chia seeds
  • 1 TBSP pure maple syrup (optional)
  • 2 TBSP No Sugar Added SunButter
  • 1 cup unsweetened almond milk
  • 1 cup mango, finely diced or puréed
  • 1/2 cup blueberries, for serving
  • mango, diced, for serving

Instructions

  1. Combine all of the ingredients in a mason jars and mix to combine.
  2. Place in the refrigerator overnight.
  3. In the morning, uncover and top with more blueberries and diced mango desired toppings. Serve immediately!
