As the snow starts to melt outside my windows, I’m finally spotting little patches of grass peeking through.

It’s a quiet but hopeful sign that winter won’t last forever.

After weeks of cold, gray days and being cooped up indoors, I can feel my energy slowly starting to shift.

I’ve been in a bit of a funk lately, missing my daily walks and the simple joy of being outside in fresh air and sunlight.

There’s something about that first glimpse of green returning that makes me crave brightness in every area of life, especially in the kitchen.

This Pink Coconut Cloud Smoothie was my way of leaning into that feeling.

It’s vibrant, creamy, and uplifting; exactly the kind of colorful boost I needed this week.

The soft coconut “cloud” paired with bright berries feels playful and nourishing all at once, and the natural pink hue makes it perfect with Valentine’s Day this month.

Whether you’re celebrating with someone you love or simply making something beautiful for yourself, this smoothie is a sweet reminder that brighter days are on the way.

What You Need to Make Pink Coconut Cloud Smoothie

Here’s what you need:

  • Frozen Raspberries or Strawberries or a Mix
  • Frozen Banana
  • coconut water
  • Unsweetened Coconut Milk
  • Navitas Organics Superfood+ Digestive Blend
  • Navitas Organics Pomegranate Powder

That’s it!

This smoothie keeps things simple while still delivering a luxurious, café-style experience.

How to Make Pink Coconut Cloud Smoothie

Start by adding 1/4 cup of canned coconut cream to the bottom of a large smoothie glass.

Use the back of a spoon to spread the coconut cream up the sides of the glass, creating a soft “cloud” lining that gives this smoothie its signature look.

Next, add the frozen berries, frozen banana, coconut water, coconut milk, Navitas Organics Digestive Blend, and pomegranate powder to a high-speed blender.

Blend until completely smooth and creamy, adding an extra splash of coconut milk as needed to thin or a bit more frozen berries to thicken.

Once blended, pour the pink berry smoothie into the prepared glass and gently swirl with a straw or skewer for a marbled effect.

Drizzle on more coconut cream on top!

Finish with a dusting of pomegranate powder or fresh berries before serving.

Description

Erewhon-inspired Pink Coconut Cloud Smoothie with a berry and pomegranate swirl that’s vegan, creamy, and perfect for a nutritious treat!


Ingredients

Layer 1: White Coconut Cloud

  • 1/4 cup canned Coconut Cream

Layer 2: Pink Berry Cloud

  • 1 Cup Frozen Raspberries or Strawberries or a Mix
  • 1 Frozen Banana
  • 1/2 cup coconut water
  • 1 cup unsweetened coconut milk
  • 1 tsp Navitas Organics Superfood+ Digestive Blend
  • 1 TBSP Navitas Organics Pomegranate Powder

Instructions

  1. Add the coconut cream to the bottom of a large smoothie glass. Use a spoon to spread the coconut cream up the sides of the glass.
  2. Add all of the pink berry cloud smoothie ingredients to a high-speed blender and blend until smooth and creamy. Add a splash more almond milk as needed to thin out the shake, and sprinkle more oats to thicken it. 
  3. Pour the pink berry cloud smoothie into the glass. Use a straw, skewer, or butter knife to lightly swirl—don’t overmix! Finish with a drizzle of coconut cream and fresh or frozen raspberries.

This Thai Carrot Sweet Potato Soup is made on the stovetop with root vegetables and yellow curry paste blended with a spoonful of nut butter. I used a standing blender but you can also use an immersion blender to achieve the creamiest consistency.

I love topping my soup with cilantro, @edenfoods Tamari Roasted Almonds, and @edenfoods Hot Pepper Sesame Oil.
