Skip the campfire and make SunButter S’mores Energy Balls with SunButter, oats, chocolate chips, and vegan marshmallows for summer snacking.

Hi friends!
We’re getting ready for our annual camping trip, and I can’t wait for a few days away to slow down, spend time in nature, and settle into a different pace.
There’s something about sleeping under the trees, cooking outside, and stepping away from the usual routine that always feels like a reset.
It’s also been a little while since I’ve shared a new post here, and I’ll admit that sitting down to write again feels both familiar and a little strange.
Life has been full behind the scenes, and while I’m not quite ready to share every update yet, I’m really happy to be back in this space with you.
I’m also especially happy to be returning with a recipe inspired by one of my favorite summer traditions!
When you’re craving the nostalgic flavors of a gooey campfire s’more but don’t want to light a fire (or turn on the oven), these SunButter S’mores Energy Balls are the perfect solution.
They’re made with wholesome pantry staples like rolled oats, creamy SunButter, gluten-free graham crackers, dairy-free chocolate chips, and vegan mini marshmallows for all the classic s’mores flavor in a convenient no-bake snack.
Whether you’re packing them for road trips, enjoying them after a summer hike, or keeping a batch in the fridge for afternoon pick-me-ups, these little bites are satisfying, kid-friendly, and incredibly easy to make.
What You Need to Make SunButter S’mores Energy Balls
One of my favorite things about these energy balls is that they’re made with simple ingredients you can keep stocked in your pantry.
Rolled oats create the hearty base, while creamy SunButter brings everything together with its rich, nutty flavor (without any nuts!).
Gluten-free graham cracker crumbs add that unmistakable s’mores taste, and vegan mini marshmallows and dairy-free chocolate chips make every bite feel like dessert.
A little ground flaxseed adds extra texture, maple syrup provides just the right amount of sweetness, and vanilla rounds everything out with warm, cozy flavor.

How to Make SunButter S’mores Energy Balls
These energy balls come together in just a few minutes with no baking required.
Simply stir together the dry ingredients, then mix in the SunButter, maple syrup, and vanilla until a thick dough forms.
Fold in the chocolate chips and chopped marshmallows before chilling the mixture briefly to make rolling easier.
Once chilled, scoop and roll into bite-sized balls, then refrigerate until firm.
That’s it!
They’re an easy make-ahead snack that’s just as perfect for busy weekdays as it is for summer adventures.

About SunButter
If you’ve never baked or no-baked with SunButter before, you’re in for a treat.
Made from roasted sunflower seeds, SunButter has a creamy texture and rich flavor that works beautifully anywhere you’d typically use peanut butter or another nut butter.
It’s naturally nut-free, making it a wonderful option for school lunches, gatherings, or anyone with peanut or tree nut allergies.
I especially love how versatile it is.
SunButter works equally well in sweet recipes like these energy balls and savory dishes like sauces, dressings, and dips!

Swaps and Substitutions
These SunButter S’mores Energy Balls are easy to customize based on what you have on hand.
You can swap the ground flaxseed for chia seeds or hemp hearts, use quick oats instead of rolled oats for a softer texture, or replace the maple syrup with agave nectar.
If you’re making these for someone who doesn’t need them to be nut-free, another creamy nut butter can be substituted for the SunButter.
Feel free to stir in shredded coconut, chopped dairy-free chocolate, or even a pinch of cinnamon for a fun twist on the classic s’mores flavor.

Notes on Meal Prep
These energy balls are one of my favorite meal prep snacks because they store so well.
Keep them in an airtight container in the refrigerator for up to one week, or freeze them for up to three months for longer storage.
Pro tip: I love making a double batch and keeping half in the freezer.
They thaw quickly and are perfect to grab whenever you need a quick snack or something sweet after dinner.

How to Serve SunButter S’mores Energy Balls
These no-bake bites are delicious straight from the refrigerator, but there are plenty of fun ways to enjoy them.
Pack a few into lunchboxes, bring them along on picnics or camping trips, or serve them on a snack board with fresh berries and fruit.
They also make a wonderful afternoon treat alongside an iced coffee or a glass of your favorite dairy-free milk.
However you serve them, they’re a simple way to enjoy all the cozy flavors of a classic s’more…no campfire required!
Enjoy!
